What a Kitchen Extract Clean Covers

A kitchen extract system is only as clean as its dirtiest section. These are the four parts, and a quotation should say which of them it includes.

Canopy and Hood

The visible surfaces above the cooking line, degreased back to bare metal. This is the part most in-house cleaning already covers — and the part that matters least for fire risk.

Filters

Baffle or mesh filters removed, soaked and degreased. Filters are the system’s first line of defence: when they are blinded with grease, everything downstream loads up faster.

Exhaust Fan

Impeller, housing and blades. A greased impeller loses balance and airflow, which is why extraction often weakens long before anyone reports it.

Ductwork

The run between hood and fan, cleaned through access panels. This is the section that carries the fire risk and the section most often skipped, because it cannot be seen.

If a quotation does not mention the ductwork and the fan, it is a hood clean rather than an extract clean. They are not the same service and should not be priced as though they are.

How Often Does Your Kitchen Need It?

Frequency follows cooking volume and cooking type, not the calendar. Char-grilling and deep-frying load a system far faster than steaming or baking.

Signs the System Needs Cleaning

Weak extraction

Heat, steam or smoke lingering in the kitchen when the system is running is usually grease on the fan impeller or in the duct, not a failing motor.

Grease at the canopy or filters

Visible accumulation at the hood means the sections you cannot see have been loading up for considerably longer.

Odours carrying through the building

Cooking smells reaching dining areas or neighbouring units often trace back to a loaded extract system.

Dripping

Grease condensing and running back down the canopy or duct is both a hygiene failure and a slip hazard on the cooking line.

Noisier fan

An unbalanced, grease-loaded impeller runs louder and harder, and wears its bearings faster.

It has been a while and nobody is sure

If no one can say when the ductwork was last cleaned — as opposed to the hood wiped down — assume it is due.

Process

How the Clean Runs

  • Site visit and survey

    We look at the hood, the fan and what duct access exists. Systems without access panels need them forming, and that has to be known before pricing.

  • Scheduling around service

    Work is scheduled around your service hours so the kitchen is not lost during trading. For most commercial kitchens that means overnight or on a closure day.

  • Preparing the kitchen

    Cooking surfaces, equipment and floors are sheeted and protected before any degreasing chemical is applied.

  • Removing hardened grease

    Filters are removed and soaked. Hardened deposits on the canopy and inside the duct are treated and scraped back rather than simply wiped over.

  • Cleaning the exhaust fan

    The impeller and housing are cleaned down, which is usually where the biggest single improvement in airflow comes from.

  • Pressure wash and reassembly

    Surfaces are pressure-washed where they can be, the system is reassembled, filters refitted and the extraction checked running.

  • Clean down and handover

    The kitchen is cleaned down and left ready for service, and we walk the system with you before leaving.

We do not publish kitchen extract prices, because these are the things that actually move the number.

Length and layout of ductwork

The dominant variable. A short vertical run behind the hood is a different job from a long horizontal run crossing a building.

Duct access

Systems built without access panels have to have them formed. Where that is needed it is quoted separately rather than absorbed.

Degree of build-up

A system on a regular schedule cleans faster than one that has not been touched in years. The first clean is almost always the largest.

Number of hoods and fans

Multiple cooking lines, multiple canopies or more than one extract fan each add scope.

Working hours

Overnight and closure-day working is standard for commercial kitchens, and it is priced differently from daytime access.

Kitchen size and equipment

How much has to be moved, sheeted and protected before degreasing begins.

Primo does not quote a kitchen extract clean without seeing the system. The ductwork is the part that decides the price, and it is the part that cannot be assessed from photographs of the hood.

What is kitchen duct cleaning?

The cleaning and degreasing of a commercial kitchen extract system — the canopy or hood, the filters, the exhaust fan and the ductwork connecting them. The purpose is to remove accumulated grease, which restores extraction performance and removes combustible material from the system.

Why does it matter?

Grease deposits inside a kitchen extract system are combustible, so a loaded duct turns an ordinary cooking flare-up into a fire that travels. Beyond that, build-up weakens extraction, holds heat and smoke in the kitchen, carries odours through the building and shortens the life of the fan.

How often should kitchen ducts be cleaned?

It depends on cooking volume and cooking type rather than on a fixed calendar — heavy frying and char-grilling load a system far faster than baking or steaming. Your insurer or landlord may also set an interval you are held to. We will recommend a frequency after seeing the system, and say so if you are cleaning more often than you need to.

Yes. Commercial kitchen extract cleaning is normally scheduled overnight or on a closure day so the kitchen is available for trading. Working hours are agreed before pricing, because they affect the quotation.
